Material-
12-15 prawn fish
2 fresh lemon grass steamed
15-20 fresh coriander sprigs
3-4 cloves of garlic
2 inches Galangal coarsely chopped
10 lemon leaves
1 tablespoon oil
1 tablespoon red Thai curry paste
3 inches lemongrass stalk, sliced ​​diagonally
1 tsp fish sauce
7-8 button mushrooms, chopped
¼ cup coconut milk
1 teaspoon lemon juice
lemon slices for decoration

Method of making,
First of all, clean the prawn fish by cutting it thoroughly. Keep the shell and heads aside. Now take 2 stems of lemon grass and lightly beat the stems with a hammer. Also beat the coriander stems and garlic cloves lightly.

Now we have to make the stock. For the stock, take a deep pan and heat it. Now add prawn shells, lemon grass, coriander stems and garlic cloves. Now add 7-8 cups of water, galangal, lemon leaves and add them to the stock. Now boil it. Reduce the heat and keep removing the foam accumulating on the stock. Let it cook on low flame for 20 minutes.

Switch off the flame and strain the stock with the help of a muslin cloth and a large strainer. For the soup, heat oil in a pan. Add red Thai curry paste and mix well. Cook for 1-2 minutes and add the prepared stock and mix well. When it boils, add lemongrass, lime leaves and galangal and mix well.

After cooking for 1-2 minutes, add fish sauce, mushrooms, prawns, add salt and mix. After cooking for 3-4 minutes, add coconut milk and let it cook for 1-2 minutes. Now add lemon juice and mix and turn off the flame. Put it in a serving bowl and garnish with lemon slices and serve hot.
